
I went to college in West Texas and, despite being a California girl, quickly developed a love for Texas-style barbecue. Since Lubbock was a “dry” city at the time, beer and liquor could only be purchased at state liquor stores on the outskirts of town known simply as “The Strip.” A stop at Pinkie’s liquor store often included a visit to its legendary barbecue counter, famous for chopped brisket sandwiches, fried gizzards, and enough smoky goodness to pair perfectly with a six-pack of Coors Light. To this day, the smell of slow-smoked brisket brings back memories of West Texas.
The summer months are the perfect time to fire up the smoker for ribs, brisket, or chicken. It’s about as close to a Texas roadside barbecue joint as you’ll find in North County.

If barbecue enthusiasts had to choose a single destination in Southern California, Heritage Barbecue would likely top the list. Located in historic San Juan Capistrano, Heritage has earned statewide and national recognition for its Central Texas-style barbecue. Brisket is the star attraction, but the giant beef ribs, house-made sausages, smoked turkey, and seasonal specials are equally impressive. Be prepared to arrive early; sellouts are common.
Whether you prefer brisket, ribs, pulled pork, or sausage, all four of these barbecue destinations understand the most important ingredient in great barbecue: patience. Low temperatures, long hours, and plenty of smoke. That’s the way they do it in Texas, and fortunately for us, it’s also the way they’re doing it right here in Southern California.
